A Holiday Favorite

Peanut Brittle

1 cup Sugar
1/2 cup White Syrup

In microwave safe bowl (handle is helpful - I use my Pyrex 4 cup measuring cup) stir together. Microwave on high for 3 1/2 minutes.

1 cup Roasted Salted Peanuts

Stir in peanuts. Microwave 2 minutes.

1 t Butter
1 t Vanilla

Add to syrup and peanuts, blending well.
Microwave 2 minutes more.

Add 1 t Baking Soda
Stir until light and foamy.
Spread onto lightly greased cookie sheet.
Let cool 1 hour. Break in pieces.
